Adieu l'Été: A Goodbye to Summer Banquet

The last warm evening of the year deserves a proper send off. We set one long table in the courtyard, light the candles at dusk, and cook the food of the South of France the way it is meant to be eaten: in the middle of the table, passed from hand to hand, with the wine kept coming. This is not a tasting menu. There is no hush, no tweezers, no lecture between courses. There is roasted fish going cold while someone finishes a story, a lamb shoulder that falls apart under a spoon, and a sommelier who would rather refill your glass than explain it. WHAT WE WILL EAT To begin, chilled rosé with black olive tapenade, anchoïade, and radishes with Camargue salt. Then, brought out together: pissaladière still warm from the oven, courgettes marinated with mint, burrata with the last of the summer tomatoes. From the fire, whole daurade with fennel and lemon, and lamb shoulder roasted slowly with garlic and thyme. Alongside them, ratatouille cooked the long way, saffron rice, and green leaves in a sharp shallot vinaigrette. To finish, apricot tart with lavender honey and fresh sheep's milk cheese. WHAT WE WILL DRINK Four wines, poured generously rather than measured: a dry Bandol rosé, a white Châteauneuf-du-Pape with more weight than you expect, a Gigondas for the lamb, and a cold glass of Muscat de Beaumes-de-Venise for the toast at the end of the night. Twenty eight seats, one table. Come alone and you will not stay a stranger for long.

Cancellation: Full refund up to 72 hours before the banquet. After that the seat is non refundable, though you are welcome to pass it to a friend. Just let us know the name.
